Chocolate Chip Cookies (gf, df, and paleo friendly)

Ingredients
  • ⅔ cup almond flour
  • ⅓ cup coconut sugar
  • ¼ cup arrowroot powder
  • ¼ cup coconut flour
  • 1 tbsp granulated sugar*
  • ¾ tsp baking soda
  • 1 tbsp flaxseed meal + 1 tbsp water
  • 1 egg
  • 3 tbsp melted vegan butter or coconut oil
  • 2 tsp vanilla extract
  • ¼ tsp salt
  • chocolate chips (however much you want)
Instructions
  1. Preheat oven to 350 degrees F.
  2. Mix flaxseed meal with water let rest for 3 minutes.
  3. Mix wet ingredients in bowl.
  4. Mix dry ingredients in separate bowl.
  5. Put dry into wet. Stir.
  6. Bake in oven for 14-16 minutes. Let cool for 10 minutes.
  7. Eat!
