Vegan & Gluten Free Sandwich Bread

Ingredients
Wet ingredients
  • 2¼ tsp. dry active yeast
  • 1 cup warm almond milk, or the milk of your choosing
  • 2 tsp coconut sugar
  • 1 cup warm water
  • 5 tbsp chia seeds
  • 3 tbsp coconut oil
  • 2 tsp apple cider vinegar
Dry Ingredients
  • 1 cup quinoa flour
  • 1 cup sorghum flour
  • 1 cup arrowroot powder
  • ¼ cup teff flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp xanthan gum
  • 1-1½ tsp salt
Instructions
  1. In a medium bowl, mix warm almond milk with yeast and coconut sugar. Set aside for 10 minutes.
  2. Add the warm water, coconut oil, apple cider vinegar, and chia seeds into the mixture and whisk. Set aside for 2 minutes.
  3. In a large bowl, whisk together the dry ingredients. Pour the wet into the dry and mix.
  4. With a spatula, spoon the batter into a greased (with coconut oil) 8x4 inch loaf pan. Make sure it it spread even.
  5. Allow the bread to rise 30-45 minutes in a warm area. I put this near the oven.
  6. Preheat oven to 350 degrees Fahrenheit.
  7. Place the loaf in the middle rack of the oven, and bake for 55-60 minutes. Allow it to cool in the pan, and then transfer to a wire rack to cool.
