Blender Black Bean Brownies (V + GF)

- 15 oz black beans, drained
- ⅓ cup pumpkin puree
- 2 flax eggs (2 tbsp flaxseed meal + 5 tbsp water)
- ¼ cup maple syrup
- ¼ cup coconut sugar (or normal sugar if not refined sugar-free)
- ¼ cup + 2 tbsp oats
- ¾ cup cocoa powder
- 1½ tsp baking powder
- 1 tsp baking soda
- sprinkle of salt
- ½ cup vegan chocolate chips
- Preheat oven to 350 degrees.
- Lightly grease 8x8 baking pan with coconut oil.
- Make flax eggs, and let them rest for 3 minutes.
- In the blender, blend the oats until flour-like texture.
- Add all the other ingredients to the blender, including the "eggs." Blend, scraping down the sides as needed. Blend until smooth.
- Add in chocolate chips if desired.
- Pour the batter into the pan, and smooth the top.
- Bake for 40-45 minutes. Let it cool for 35 minutes before serving.
