Blender Black Bean Brownies (V + GF)

Ingredients
  • 15 oz black beans, drained
  • ⅓ cup pumpkin puree
  • 2 flax eggs (2 tbsp flaxseed meal + 5 tbsp water)
  • ¼ cup maple syrup
  • ¼ cup coconut sugar (or normal sugar if not refined sugar-free)
  • ¼ cup + 2 tbsp oats
  • ¾ cup cocoa powder
  • 1½ tsp baking powder
  • 1 tsp baking soda
  • sprinkle of salt
Optional
  • ½ cup vegan chocolate chips
Instructions
  1. Preheat oven to 350 degrees.
  2. Lightly grease 8x8 baking pan with coconut oil.
  3. Make flax eggs, and let them rest for 3 minutes.
  4. In the blender, blend the oats until flour-like texture.
  5. Add all the other ingredients to the blender, including the "eggs." Blend, scraping down the sides as needed. Blend until smooth.
  6. Add in chocolate chips if desired.
  7. Pour the batter into the pan, and smooth the top.
  8. Bake for 40-45 minutes. Let it cool for 35 minutes before serving.
