No-bake Chocolate Protein Cookies

- ¼ cup coconut oil
- ¼ cup almond milk
- ⅔ cup coconut sugar
- 2½ tbsp cocoa powder
- 1½ scoop unflavored, unsweetened vegan protein powder (+ 1 tbsp mesquite flour, optional)
- ⅓ cup peanut butter
- 1½ cup gluten-free oats
- ½ tsp salt
- 1 tbsp chia seeds
- cinnamon
- Melt first 5 ingredients in a bowl over a pot of water on a medium flame.
- Once everything is mixed, move the bowl to the side, and add in rest of ingredients.
- Spoon out the batter and place it onto a parchment-lined pan or plate and refrigerate.
