- 1½ cups gluten-free flour blend
- ½ cup buckwheat flour
- ¾ cup gluten-free oats
- 1 tsp salt
- 4 tsp baking powder
- ½ cup cold vegan Earth Balance (or another vegan butter)
- ½ cup chopped pitted dates
- ½ cup walnuts
- ⅓ cup sugar
- ¾ cup almond milk
- 2 tsp vanilla extract
- cinnamon
- dairy-free chocolate chips
- Preheat oven to 350 degrees Fahrenheit.
- In a medium bowl, whisk together flours, oats, salt, and baking powder.
- Cut cubes of earth balance and put it into the flour mixture, and mix until the flour mixture becomes crumbly with pea-sized bits of butter.
- Mix in dates and walnuts.
- Mix in gently with a spatula the sugar, almond milk, and vanilla extract.
- You can bake it right away or refrigerate the dough for either 20 minutes (or overnight).
- Scoop ~1/2 cup portions onto a parchment lined baking sheet.
- Bake for 25-30 minutes or until toasty looking.
