What better way to ring in the new year than with some coffee? And not just plain coffee, but the ultimate coffee dessert: tiramisu. Fun fact: in Italian “tiramisu” means “pick me up.”
But these aren’t your ordinary tiramisu with sugar-crusted lady fingers, and marscapone cheese.
These tiramisu cups have a modern take on the traditional one. For one, they’re vegan – with cashews and oat milk making up the vanilla “marscapone” cream and coffee cream, which is flavored by espresso powder. Then, I used a gluten-free cookie (these weren’t vegan but you can replace them with these) to act as the base, added some of its crumbled pieces around it, and poured espresso.
I like to use coconut agave as the sweetener because it tastes most caramel-like, but you can opt for maple syrup.
These cups are delightful for an adult occasion, and since they’re cups, it also mean less messiness compared to traditional tiramisu. Scooping up the perfect creamy spoonful consists of vanilla cream, cookie crumbles, coffee cream, and a dash of cinnamon.
