3-ingredient cinnamon apple wedge treats (GF + V)

For a gluten-free and dairy-free gal in college, simple, feel-good desserts can seem like a distant memory. Sometimes, I just want something sweet that’s not chocolate. Luckily, my mom taught me this super easy recipe that she learned when she was my age. It checks the box on desserts and is made with ingredients that are easily accessible in a dining hall.

It only has three ingredients, which you can switch up in proportion or variation to your liking:

  • Granny Smith apples. You can choose whatever apple you like best here. I personally like the Granny Smith variation because its tartiness tastes delicious with melted sugar. Apples have a lot of vitamin C and fiber, keeping you full for a longer period of time.
  • Brown sugar, raw sugar, or coconut sugar. (Or white sugar, but sticking to unrefined sugars is best.)
  • Cinnamon

Place all of these ingredients in a microwave and you’ve got yourself cinnamon apple wedge treats. Want to give it a cobbler-esque flare, mid-way through the microwave time, add in some raw gluten-free oats.

Depending on how much sugar you add, this recipe can double as a breakfast too, by topping it on some overnight oats, chia pudding, or warm oats.
