
I’ve been on a chocolate chip cookie craze lately. And these nut butter cookies only have 6 ingredients: sweetened almond butter, egg, gluten-free flour, chocolate chip cookies, baking powder, and salt.
This all started when my brother was lagging to finish his Justin’s Vanilla Almond Butter (we tend to have a collection of nut butters). I would have eaten it, but I decided to experiment with it instead. If you don’t have this nut butter, or a sweetened nut butter, you can put 3 tablespoons of coconut sugar with the unsweetened nut butter and egg.

These cookies can make sandwiches, with ice cream – I particularly like Coconut Bliss’s Madagascar Vanilla Bean with it for a classic flavor. But these cookies also pair well with a coffee flavor for the adults 🙂
